The Oxford Tavern, Petersham’s much-loved community boozer known for its epic food, stiff drinks, and steamy late nights, has undergone a substantial renovation. The new and improved Tav will reveal a sexy new fit out, and a wholly new food direction by our Group Executive Chef, James MacDonald (ex-Restaurant Hubert) and Head Chef John Hockey.

Ascending to an elevated and modern pub menu, with classics done well and featuring influences from facets of worldwide cuisines, our Head Chef is seeking an experienced Sous Chef to assist in stewarding the team and venue through this transformative period and into long-term success with its revamped offering.

Our kitchen team is tight-knight and professional, with an adaptable and collected Head Chef who is well-equipped to lead, direct, and support our team, through bustling service.

Our Senior Sous Chef will be responsible for:

  • Effectively controlling the food production, giving maximum quality and yield
  • Constantly controlling quality and quantity of food going out of the kitchen 
  • Ensuring that all sections are staffed efficiently
  • Making sure the kitchen team is giving an efficient, smooth and quick service while maintaining principles and standards set by the Group
  • Ensuring that the kitchen is organised and run to the highest possible levels of safety and hygiene
  • Organising and carrying out stock-takes
  • Assisting in training and motivating the kitchen staff, and assisting to manage a well-disciplined team with a positive working culture

You will need an understanding of:

  • Managing and auditing food safety and kitchen hygiene standards
  • Assisting to recruit, train, and develop staff within a team
  • Managing service holistically across all sections
  • Conducting stock-takes and resolving wastage issues
  • Implementing and controlling procedures that facilitate consistent food quality with minimal waste
